<p align="center">In my effort of only eating dinner out once a week until Christmas, I continued on my simply but delicious meals. Tilapia was on sale last week at my favorite grocery store <a href="www.stewleonards.com" target="_blank">Stew Leonard’s</a>. It is my go to fish as it is light and not very fishy tasting, which is a crowd pleaser in this house.&#160; I found this great recipe from another Food Network favorite of mine, <a href="http://www.pauladeen.com/" target="_blank">Paula Deen</a>. My little daughter is fascinated with Paula and always screams when her show comes on, “Mommy Ya’’ll is on, Ya’ll want some butter is on!” It always give me a good chuckle and we have some mommy/daughter time with Paula Deen. </p>
<p align="center">This recipe is probably one of the simplest recipes I have seen from Paula, but simple this week is best. This recipe actually comes from her sons which I love! Anything to bring family closer together and why not through a recipe.</p>

All I could say is “I don’t have time to be sick!” She loaded me up with supplements and wrote my a prescription for Tamiflu. Her fear was since I had bronchitis only a month and half ago that H1N1 could really compromise my immune system. So I have everything I need to finally knock this out of my system.</p>
<p align="center">So what does Mom on the Run cook when is has been grounded? A yummy <a href="www.rachaelraymag.com">30 minute Rachael Ray Meal</a> that required very little work but had a very big taste.</p>

<p align="center">With that said I needed something quick and simple to make for dinner. In our effort to only eat out once a week, I am on a quest to find more take out-fake out recipes. </p>
<p align="center">I found this one from <a href="www.foodnetwork.com" target="_blank">Food Network.com</a> from <a href="http://www.foodnetwork.com/guy-fieri/bio/index.html" target="_blank">Guy Fieri</a>. He is one of my least favorite Chefs on the Food Network.&#160; I really do not have a firm reason why I don’t care for him but his shows are not at the top of the list I watch. When I saw this recipe I knew that my whole family would enjoy it, no matter if it was from Guy Fieri. </p>

<p align="center">In a resealable plastic bag combine the soy sauce and cornstarch and mix well. Add beef, cover, and let marinate for 20 minutes in the refrigerator. </p>

The sun was shining, the weatherman had a great weather report, and my little Swine Flu victim got up and said she was ready for school. I got ready as usual, checked her temperature one last time to double check there was no fever (the thermometer said 98.1), and headed out the door. </p>
<p align="center">Fast forward 2 hours…….I was in the middle of administering an assessment to my students and trying to get ready for one of two parent meetings that I had to attend today…..when the phone rang. The dreaded voice at the other end of the line, “Hi Mrs. Seals this is the school nurse at T’s school. T has come to my office because she is not feeling well and her temperature is 100. Can you come get her.” I felt so bad! She was fine when I dropped her off at school. How quickly this virus can go right back through you. </p>

<p align="center">We decided to keep the girls inside and laying low. My little one is feeling like brand new. She has a bit of a lingering cough (the doctor warned this could be the case for up to 2 weeks!) but she has been fever free for over 24 hours, meaning she can go back to school tomorrow. She has never been so happy to go back to school. All I have to say is thank goodness that there was Tamiflu available for her. It definitely did it’s job of lessening the symptoms of the flu.</p>
<p align="center">Of course we still had Sunday dinner tonight. I found a bunch of different recipes with an Asian flare as that is what I was craving tonight. The recipes included Singapore Noodles, Tangerine Beef Stir Fry, Fried Rice, and Mom on the Run’s Steamed Dumplings. I promise to highlight and post recipes for all that I have named but I am tired after all that raking today. I do want to share one that was a tasty crowd pleaser that could easily be on your dinner table this week.</p>
<p align="center">I found this recipe in of course <a href="www.cookinglight.com" target="_blank">Cooking Light</a> (October 2009 Issue pg 128). I love PF Chang’s Street noodles and really wanted to find something that tasted very similar. This recipe will not disappoint anyone who loves those noodles.</p>
<p align="center"><font size="4"><a href="www.cookinglight.com" target="_blank">Singapore-Style Noodles</a></font></p>
<p align="center"><font size="4">     <br /></font><font size="3"><strong>Ingredients:       <br /></strong></font>5 ounces uncooked rice vermicelli    <br />1/4 teaspoon cumin seeds    <br />1/8 teaspoon coriander seeds    <br />1/8 teaspoon mustard seeds    <br />1 whole clove    <br />1/8 teaspoon ground red pepper    <br />1 cup (1-inch) pieces green onions    <br />5 teaspoons canola oil, divided    <br />5 bacon slices, cut into 1-inch pieces (I omitted this)    <br />Cooking spray    <br />1 pound large tail-on shrimp, peeled and deveined    <br />1/4 teaspoon black pepper    <br />1/4 teaspoon salt, divided    <br />2 tablespoons low-sodium soy sauce    <br />1 tablespoon rice wine vinegar    <br />1 tablespoon hoisin sauce    <br />2 teaspoons chili garlic sauce (such as Lee Kum Kee)    <br />1 1/2 teaspoons grated peeled fresh ginger, divided    <br />1 cup (1 1/2-inch) julienne-cut red bell pepper</p>
<p align="center">1. Soak noodles in warm water 2 minutes. Drain well. I actually followed the instructions on the package for this step. I boiled the water first than put the noodles in. </p>
<p align="center">Combine cumin, coriander, mustard seeds, and clove in a spice or coffee grinder; pulse until finely ground. Stir in red pepper.</p>

			<content:encoded><![CDATA[<p>This is going to be a quick post tonight. My little one has a nagging cough that is keeping everyone up in the house. I am hoping&#160; to get a better night sleep tonight and that she is feeling better in the morning.&#160; </p>
<p>I found another great Butternut Squash recipe that I wanted to try because I really wanted to clean out my freezer and I had a bagged of chopped squash ready to go. This recipe I found on <a href="www.foodnetwork.com">foodnetwork.com</a> because it was the first recipe that popped onto my screen when I logged on. It looked amazing so I decided to give it a try.&#160; I did tweak the recipe a bit to meet my family’s needs and taste preferences.</p>

<li>Cooking spray </li>
<li>1 pound elbow macaroni </li>
<li>2 (10-ounce) packages frozen pureed winter squash </li>
<li>2 cups 1 percent lowfat milk </li>
<li>4 ounces extra-sharp Cheddar, grated (about 1 1/3 cups) </li>
<li>2 ounces Monterey Jack cheese, grated (about 2/3 cup) </li>
<li>1 teaspoon salt </li>
<li>1 teaspoon powdered mustard </li>
<li>1/8 teaspoon cayenne pepper </li>
<li>2 tablespoons grated Parmesan </li>
<li>2 tablespoons unseasoned bread crumbs </li>
<li>1 teaspoon olive oil </li>
</ul>
<h4>Directions</h4>
<p align="center">Preheat the oven to 375 degrees F. Coat a 9 by 13-inch baking pan with cooking spray.</p>
<p align="center">Bring a large pot of water to a boil. Add the macaroni and cook until tender but firm, about 5 to 8 minutes. Drain and transfer to a large bowl.</p>

<p align="center">Meanwhile, place the frozen squash and milk into a large saucepan and cook over a low heat, stirring occasionally and breaking up the squash with a spoon until defrosted. Turn the heat up to medium and cook until the mixture is almost simmering, stirring occasionally. </p>

<p>I wish I would have taken a picture of the final product because as any dish that has butternut incorporated in it, the dish was amazing. All the right fall flavors mingled together. </p>

			<content:encoded><![CDATA[<p align="center">We had a wonderful Halloween weekend here in Connecticut and I am still recovering from it <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  My neighbor and I one day in early October were talking about how we don’t “really” know our neighbors very well. All of our children had played together over the summer but we did not have a chance to interact with the adults in a more social way. We decided that we should host a neighborhood Halloween Block Party to get everyone together and celebrate the fall season. </p>
<p align="center">The party was a success! The kids had a blast and the adults got to mingle and chat about something else than the normal bus stop chatter.</p>

Here is one of my favorite recipes I made this weekend. This was a recipe that was suggested for me to try from my dear from Kristin. Kristin detests Rachael Ray (gasp), but found this recipe and put her hate aside. She praised the flavors and the kid friendliness of the recipe. I trust her culinary taste and decided to try the recipe myself. </p>
